More than 40 years ago Mr Crotti decided to produce Traditional Balsamic Vinegar of his own passion and pleasure, and started by buying a set of French oak barrels for aging. Some of these barrels date back to the 18th and 19th centuries. The wooden casks gradually release their precious bouquets, helping the Crotti family in the painstaking task of preparing top quality products. The color code chosen by Il Borgo del Balsamico is as follows: yellow, orange and red for the balsamic condiments and vinegars. Each colour represents a different flavour direction and raging duration. The difference product characteristics are communicated simply and with particular style.
