Pantelleria is a small volcanic island between Sicily and Tunisia. Because if its unique soil, hot days and very cold nights, and windy weather, it is considered the best place to grow capers. Capers develop a stronger sweeter taste, are more fragrant floral aroma and dense structure. Also fermentation of capers is done in salt, not vinegar, so the taste quality is much better.
